Recipes
I love to cook, and give thanks to my parents for
fostering my interest. I still toy occasionally with the idea of going to chef's
school and taking a job in a tony restaurant--but most likely I couldn't handle
the long hours, so only family and friends are likely to taste my stuff. (Too,
my sister's been there and done that. Let's just say it's not at all the
glamorous occupation it may appear to be.)
You're welcome to download and try any of these. You'll need Adobe's
free Acrobat Reader software. Be warned that
I treat recipes as guidelines: adjust and adapt as your tastes dictate. If you're one of those people who needs to
know the exact amount of an ingredient to use, or exactly how long to cook a dish, you will probably not care for
my cooking style. Many of these come to me from friends or professionals I admire (sometimes both!), and I try to
give credit where it belongs.
Appetizers and party snacks
Cranberry ice (not so much an appetizer as a palate cleanser). Cheddar-Olive balls. Mushroom toasts.
Soups and stews
Cream of broccoli soup. Cheese fondue.
Feijoada (black beans and rice). Garlic soup.
Clam chowder as made at the Robert E. Lee Hotel, Winston-Salem NC
(demolished March 26, 1972).
Salads
Colonel Chutney's shrimp salad.
Breads
Billionaire banana-bran muffins. Mom's bran muffins.
Moravian lovefeast buns.
Entreés
Beef tenderloin with mustard-caper sauce. Heavenly
chicken casserole with broccoli (the ultimate hotdish). Fusilli with roasted tomatoes,
asparagus and shrimp. Garides me feta (Greek shrimp and feta cheese). Moules Mariniere (mussels steamed
in wine and herbs). Oyster stew. Poulet sauté à la crème (chicken
and mushrooms in cream sauce). Shrimp and grits. Tandoori-marinated
grilled chicken. Medallions of pork tenderloin in tarragon-mustard sauce. Cabbage rolls.
Vegetables
Sweet potato pudding. Spinach with pignoli and raisins.
Desserts
Mom's all-star cheesecake. Sugar plums.
Drinks
Long Beach tea.
Condiments and sauces
Crash's demon hot sauce. Crash's "beats
the pants off Pace" salsa. Spicy/sweet mustard.
Berry dressing. Crash's garlic/habañero vinegar.
